(PF CHANG’S inspired) Chicken Lettuce Wraps

Back in the day, before PF Chang’s had a gluten free menu, and before my diagnosis, I was OBSESSED with the lettuce wraps! Like I would crave them non stop. I remember my freshman year of college, I would always beg my friends to go. And sometimes I would even go alone haha which is super weird and surprising now considering Chinese food is my least favorite cuisine!  It wasn’t until recently that PF Chang’s came up in conversation and I remembered this brilliant time in my life and INSTANTLY craved them. While I could very easily get to my local PF Chang’s, I’d rather try and recreate the meal at home! **btw, not at all trying to promote PF Chang’s here…I’m sure Chinese people may feel similarly about it as I do about Olive Garden… (gross, fake Italian) BUT I will say, without a doubt, the lettuce wraps are BOMB!! And I think I got as close as I could to the real deal with this recipe!!!

Chicken Lettuce Wraps

  • 1 lb chicken (diced or ground)
  • 3 TBS Tamari (GF soy sauce)
  • 3 TBS Hoisin sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoons Sriracha (if ya like it hot!)
  • 3 tablespoons Sesame oil
  • 1 package white mushrooms (diced)
  • 1/2 cup grated carrots
  • 3 scallions (sliced for garnish)
  • 3 garlic cloves (minced)
  • 2 tsp ground ginger
  • 1 package of either butter lettuce, romaine hearts, or green leaf lettuce for serving

 

Directions: 

  1. Combine the Tamari, Hoisin, Vinegar, Sriracha, and Sesame oil in a bowl
  2. Add the ground ginger and garlic to a pan with some cooking oil (I used avocado oil-no added flavor and high smoke point)
  3. Dice up the chicken and add to the pan
  4. Once cooked all the way, add in the mushrooms and carrots
  5. Pour the sauce on top of the mixture and stir until the mixture is well coated and the sauce is hot
  6. Place the mixture on a piece of lettuce and top with sliced scallions
  7. ENJOYYYYY!
