Egg & Hash brown Casserole w/ Goat Cheese + Andouille Sausage

Hey y’all! Summer is almost over and that means the craziness that is my life hits full speed..between juggling two schools and a job, i might just lose my mind! I can only hope that I will be able to keep up with the blog and keep my posts consistent (fingers crossed)

Anyway, today I’ve got a tasty breakfast casserole coming at you that turned out to be quite phenomenal, if I do say so myself. It was kinda one of those things that just hit me in the moment and I decided to go for it. I’ve actually never made a casserole in my life–coming from a family of chefs, we aren’t exactly the casserole type..not to say there is anything wrong with them ;)

Of course, this is a breakfast casserole because what could possibly be better?!

Egg & Hash brown & Goat Cheese Casserole

  • 5 eggs
  • 1/2 cup of tomato basil goat cheese
  • 1 pack of hashbrowns
  • 1 red bell pepper diced
  • 1 yellow onion diced
  • 1/2 shallot diced
  • salt and pepper to taste
  • 1 andouille sausage
  • 1/4 cup of milk


** start by layering your baking dish with a tiny bit of oil–then add the hash browns and add the (already) sautéed onion, shallot, bell pepper, and goat cheese on top. On the side, whisk the 5 eggs with the 1/4 cup of milk and add garlic salt/pepper. Set oven to 375 for 40 minutes. Cook until slightly brown on top and eggs are cooked all the way through! **

This is such a tasty and easy recipe that anyone who loves breakfast like I do would love :)
