Dessert Week: PB & Chocolate Rice Krispies

A day late is better than never, right?! As I’ve already stated, dessert is not my thing but I am trying my best to get out of my comfort zone! As you can imagine, being gluten free doesn’t make things very easy for me as far as the dessert realm but I tried my best with a classic that i hope will appeal to everyone :)

Included at the end of this post is my favorite place to get gluten free desserts here in lex!!



PB Chocolate Rice Krispies

  • 1/2 bag of mini marshmallows
  • 1/2 jar of peanut butter
  • 1 teaspoon vanilla
  • dash of maple syrup
  • 1/4 cup of coconut oil
  • 1/2 bag of rice krispies
  • 1/2 bag dark chocolate chips

** 10-12 small bars **

Start by melting the coconut oil in a pot and adding the PB on medium heat. Slowly add in the marshmallows and stir until melted completely. Add your vanilla and maple syrup near the end! Once everything is melted, add the krispies and stir thoroughly. Melt the chocolate chips in a bowl separately. (Microwave for 1 minute) Using a spatula, put the krispie mixture into a baking pan and cover the top with the melted chocolate. Let it sit for about 30 minutes till chocolate has hardened!
