Dinner Week: Honey Sriracha Chili Chicken w/ Brown Rice

Hey guys! I think it is safe to say we have all had those moments where something didn’t work out as planned…whether it be in the food world with a bad recipe or any other aspect in life. Today’s dinner was something I struggled with. For the longest time, I couldn’t think of something to post until I realized I had literally God’s gift to the earth right conveniently in my fridge. What is that gift you might ask? Sriracha Garlic BBQ. This sauce will literally change your world. Not even kidding. It is a spicy intense flavor of garlic and a splash of barbecue. No lie, I put this on everything. It is in my holy grail list of food items, for sure!

This combo of the sriracha bbq + sweet chili +honey was the perfect marinade for my not so perfect chicken breasts :/ The chicken I bought was sub par (at best) In culinary class, we are taught how to determine the freshness of a chicken by a lot of different critical signs–such as color, smell, texture, touch, and overall appearance. Let’s just say this chicken wasn’t the freshest of the bunch! Not ideal for a nice dinner, but hey, still edible! Once the dinner was finished, the chicken didn’t seem so bad smothered in delicious sauce, just a tad on the dry side ;)

** For the chicken marinade: sweet chili sauce, honey, and sriracha BBQ. Toss chicken in the sauces and place in a ziploc in the fridge for an hour at least **

Honey Sriracha Chili Chicken

  • 1/2 cup sriracha bbq
  • 1/4 cup sweet chili
  • 1 tablespoon honey
  • splash of chicken stock
  • salt & pepper to taste
  • olive oil–for saute

** Saute marinated chicken in olive oil, add seasoning as necessary. Top over any kind of starch. In the picture below, I used brown rice! **
