Lunch Week: Quesadilla Bites w/ Guacamole (GF & Vegetarian)

Bet you all thought I forgot the post for today, nope! It has been a hectic week though, thats for sure. Between my move, work, and school– life is heating up! And that is precisely why recipes like these quesadilla bites are such a hit because they are extremely easy, tasty, and convenient! I know people make quesadillas all different kinds of ways like in the panini press, on the stove, and in the microwave (ick) and i’m usually all bout the panini press but I’ve recently been using the stove top (and taking advantage of my last few days with a gas stove… :( #firstworldprobs )

Anyway, Happy Lunch week! This is 1 of 2 coming at ya!


Quesadilla Bites

  • *Gluten Free white corn tortillas
  • olive oil (as needed)
  • 1 red pepper
  • 1 sweet yellow onion
  • 1/4 cup mushrooms
  • 2 cloves of garlic
  • taco seasoning (chili pepper, garlic powder, onion powder, salt, pepper)

Like I said, these are so simple! Simply saute your veggies or meat or whatever you feel like and season them WELL! no one likes a bland quesadilla ;)


** topped them off with my leftover sriracha aioli **

Can’t believe I am sharing this…..BUT here it goes,


Better Than Chipotle Guac 

  • 3 avocados
  • 1/2 red onion (small dice)
  • 2 cloves garlic (minced)
  • 1 whole lime
  • 1 teaspoon salt
  • 1 teaspoon fresh cilantro (chiffonade)
  • 1/2 teaspoon chili pepper
  • 1 serrano pepper (minced)
  • 1 tablespoon olive oil
