Breakfast Week: Scallion and Chorizo Potato Pancakes w/ Sriracha Aioli

So, it is day two of breakfast week…..AND after Tuesday’s post I am still craving pancakes. Surprise, Surprise! However, it is a very different kind of pancake dedicated to my friends who have more of a “savory tooth” than a sweet one ;) (me) I really enjoyed cooking (and eating) this for you guys and I must say this culinary school thing is definitely helping me out with not only cooking methods but presentation and ideas!












Scallion & Chorizo Potato Pancakes

  • 1 pack of frozen hash browns (thawed and brought to room temp)
  • 1 tablespoon of chili powder** optional, but i really like spicy!
  • 2 cloves of garlic
  • 1/2 cup of scallions
  • 3-5 slices of dried chorizo
  • 2 eggs
  • salt & pepper to taste


Sriracha Aioli

  • 1 cup mayonaise
  • 2-2 1/2 tablespoons of sriracha
  • 1 lime
  • pinch of salt & pepper


*** Combine eggs, scallions, garlic, salt, pepper, hash browns, chili powder together in a bowl and form into small pancake shaped clusters! In order to get that crispy nice golden brown texture and color–make sure you are pan frying at a minimum of 350 degrees! Make sure you hear a loud sizzle when you drop it in the pan–that means your oil is ready to go!***
