Hey guys!! I am throwing a new series at ya, which means I need to get my lazy self out of bed and start cooking! Time for some honesty– cooking and nutrition are truly my passions. However, I’ll be honest, I’m going through a lot right now and struggling immensely with big changes in my life. I am at a point in my life where I am trying to transition into moving out of my comfort zone: doing the same pointless things everyday to living intentionally (thanks mom :)) and taking control of my life. Cooking and writing about my experiences, recipes, and traveling, gives me the most joy and sense of purpose in my life and I hope you all enjoy it as much as I enjoy making these :)
Okay enough of that and on to the fun stuff!! This new series will be a twice a week deal (I am thinking tuesdays and thursdays) where I will make two breakfast recipes, two lunch recipes, two dinner recipes, and two dessert recipes in a rotation. ***This is subject to change***
Today’s breakfast is a dedication to my girl Anna and our obsession with larabar! Decided to take that same taste and transform it into pancakes….because who doesn’t love pancakes?! Super easy, moderately healthy, and few ingredients!
Banana Bread Pancakes
- 2 ripe bananas
- 1 large egg
- 1/2-1 cup of gluten free baking mix ( i would suggest coconut or almond flour (high in protein and healthy fats)…I just used what I had)
- 1/2 teaspoon vanilla
- 1 tablespoon cinnamon
- 1/4 cup dark chocolate chips *** optional
- 1 tablespoon of coconut oil (heated up)
- water (to create desirable consistency)
Honey Maple Syrup
- 1/4 cup maple syrup
- dash of honey
- dash of vanilla
Combine all ingredients into a blender until it is at the consistency that you like! I like my pancakes a little bit on the thiner side so I added a little bit of water. You can also add milk if you’re into that! Do the same with the syrup and you are good to go!

P.s. these are gluten free…but I promise you won’t even notice :)
