Chocolate Chip Cookies/Muffins w/ Maple Honey Glaze

Dead week has arrived and I have been feeling, well, dead. Stressed and overwhelmed are just a few of my current emotions. So, what better thing to do then bake/cook my life away??? I’ve been needing cookies in my life (obvi) I hardly ever eat sweets but when I do….I go all out ;)  Here’s a little something I thought of in my current state of chaos…

P.s. If any of you are #glutenfree (or even if you’re not) check out Pamela’s products—they are seriously the best, I use the baking mix for pancakes all the time and the brownies are to die for. Shout out to Pamela for making the gluten free lifestyle enjoyable and tasty :)

Chocolate Chip Cookie/Muffin 

  • 1 cup of Pamela’s Products gluten free baking&pancake mix
  • 1/4 cup of brown sugar
  • 1 egg
  • 1 cup of semi sweet chocolate chips
  • 1 tablespoon of vanilla
  • 1/4 cup of water
  • 6 tablespoons of coconut oil

Maple Honey Glaze

  • 1/2 cup of maple syrup
  • 2 tablespoons of butter (UGH, it killed me to use butter)
  • 1 cup of confectioners sugar
  • 1 tablespoon of honey

***Mix all of the ingredients for the cookie/muffins….They turn out to be a better consistency for muffins but cookies will work out fine too…Makes roughly 9,combine in a bowl and place in small balls on a pan…Cooks for around 15 minutes, but check at 12 (don’t want to overcook) While this is cooking, create the maple honey glaze! Combine the syrup + honey and bring to a simmer over a hot burner, take off the burner after 5 minutes of simmering (shout out to my mom LOL) and add the sugar and honey. Stir together and allow another 5 minutes to cool. Once cooled, drizzle on top of the cookie/muffins and ENJOY :))))

These turned out way better than I could have imagined;; I hope you will see and try for yourself :) Obviously, these aren’t a “healthy” choice, but hey you gotta live a little sometimes (TREAT YO SELF) Have a great rest of the week!!
