PB Chocolate #GF Muffins!

I recognize that this following statement is going to make me sound like your average white female, BUT I love pinterest!!! But lets be honest, the only thing I really look at on there is the Food&Drink category. (Foodie probz) When I’ve got an idea but lacking inspiration, pinterest saves the day. This has been the case these past few weeks, due to me being slightly off my cooking game. I’m not sure what my deal is, but I haven’t really had much of an appetite. (I know some of your jaws just dropped, including mine) If there is one important thing to know about me, I am always hungry. And I constantly crave rich foods. I think that I will forever be working on portion control…

On another note, I am still head over heels for my Blendtec and have been continuing to experiment with it…went on pinterest and found a recipe for Blendtec muffins that I just had to try!!! As always, I adapted it to make it my own:)

PB Chocolate (Gluten Free) Blendtec Muffins

  • 2 Medium Bananas
  • 1/2 tsp of baking powder
  • 1/3 cup honey
  • 1 cup peanut butter/almond butter (I used vanilla espresso almond butter)
  • 1/3 cup shredded coconut flakes
  • 2 eggs
  • ~1/2 cup chocolate chips
  • 1 dash of cinnamon

TIP: Maybe add some vanilla extract or maple syrup for added sweetness!

If you don’t have a Blendtec blender (I highly recommend them) these blenders could break through a rock, I’m pretty sure. (Not that I plan on trying it out) Put all ingredients in the blender and you should have a perfectly smooth mix after about 20 seconds. Fill the muffin tin spots about half way full;; set the oven to 400 degrees and cook for about 10 minutes! (Made 10 regular sized muffins)

Perfectly easy recipe for a convenient sweet treat!! Will definitely be making these cuties again :)
