Kentucky, I really don’t get you. In case y’all don’t constantly check the weather (who does??) we are currently experiencing another “snowpocalypse”. And yes, this means we have yet another snow day here at UK! That makes a grand total of 5 snow days!! When I wake up in the morning, I am 9 times out of 10 craving something savory or salty. So I make an egg scramble with loads of veggies. However, this snowy morning my sweet tooth was going crazzzzy…so what else are you going to do but treat it to coconut bars??!
No Bake Coconut Bars
- 1 cup TJ’s #glutenfree rolled oats
- 1/3 cup honey
- 2/3 cup almond butter (I used Whole Food’s brand)
- 1 tablespoon coconut oil
- ~ shredded coconut flakes (for garnish on top)
- 1 cup semi sweet chocolate chips
- 1/3 cup maple syrup
- 2/3 cup peanut butter of your choice ( I used Snyder’s all natural creamy PB)
^^^SUPER EASY! Basically, combine all shown ingredients and mix together. Then spread the batter on a pan or baking dish and put it in the fridge for about an hour. ***honey and chocolate chips are not pictured***
Hooray for no artificial or added sugars!!!! (A+++)
Cut them into little bars and serve to all your favorite people worthy of this delicious treat ;) Gotta give it up to snow days for allowing me this time to make tasty treats!
