Obsessed w/ Oatmeal Bake!

Holy Oats!!! I have found a new addition to my favorite recipes. I’m currently taking a cooking class for my major called “Food Preparation”, which is so so fun because each day we learn a new basic skill and then each group gets assigned a recipe, and we cook it and the whole class gets to taste at the end. It’s perfect because it’s at noon so I never have to worry about packing a lunch ;) Anyway, this past week we were learning advanced egg cookery and my group was assigned a frittata, which we royally screwed up. Soo I was kind of thinking about redoing the recipe and redeeming myself for this post. However, lately I’ve just not been feelin eggs. I think it’s just one of those things that after you eat it every single day; your body just doesn’t want it anymore. Which is actually really sad….because I eat breathe & sleep EGGS. And then I thought of it…If not a baked egg dish, what about baked oatmeal!? And so it began…

Oatmeal Bake

  • 2 cups TJ’s #glutenfree rolled oats
  • ~1/2 cup of chocolate chips
  • 1/4 cup brown sugar
  • 1 egg
  • 2 whole bananas (chopped)
  • 1/2 tsp salt
  • ~ a dozen strawberries & then some (chopped)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 cups of water (If you like milk, then USE IT…It would make it a whole lot creamier, I just cant stand milk)
  • ~ 4 tablespoons of coconut oil
  • 2 tablespoons of vanilla extract

***Mix the dry ingredients together in one bowl: oats, cinnamon, brown sugar, baking powder, salt, strawberries, chocolate chips, and one of the chopped bananas

***Mix the wet ingredients together in one bowl: vanilla extract, coconut oil, water and egg

***First pour all of your dry ingredients into your baking dish. ( I used a pyrex baking dish loaf pan 8 1/2 x 4 1/2 x 2 1/2 ) Then pour the wet ingredients over the dry ones—make sure it gets evenly distributed!! Add the remaining banana as a finishing touch :)


^^^Put this beautiful creation in the oven at 375 degrees for about 45 minutes or until the oats start to brown…take it out & let it cool for a bit and serve!!


Believe it or not, but this is actually a miracle that I was able to bake something! Ask anyone close to me and they will tell you that I may be a decent chef, but baking is NOT my thing. They say baking is more of a science, while cooking is an art form. Maybe this explains my science grades…. ;)
